Sausage and Cheese Muffins

I have baked these "muffins" a few times now and my family loves them. I put "muffins" into quotations because they are more like biscuits. They are doughy but delicious. What I like best about the recipe is that most of the ingredients are interchangeable. I have baked them with bacon instead of sausage and they were great. You can take out the green chile's and use chopped onions instead. It really is a recipe that you can play with. I hope you enjoy them as much as my family does...they beg for me to make them!

Ingredients

  • 2 cups all-purpose flour
  • 1 cup shredded extra sharp cheddar cheese
  • 7 Turkey Sausage links, cooked and chopped
  • 2 tablespoons sugar
  • 3 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 2 egg
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 4 oz can Green Chile's
Directions
  1. In a large bowl, combine the first eight ingredients. In a another bowl, beat the egg, milk and oil. Stir into dry ingredients just until moistened. Fill greased muffin cups two-thirds full. Sprinkle more cheese on top. Bake at 400 degrees F for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.
